Aubergine and potato samosas


Ingredientes, serves 4:
  • 1 pack filo pastry
  • 2 potatoes
  • 1 large aubergine
  • 1 garlic clove
  • ½ tsp curry powder
  • Basil
  • Sesame seeds
  • Salt
  • Oil
  • Sweet and sour sauce

Cut the potatoes and aubergines into small cubes.

Heat a little oil in a frying pan and add the clove of garlic. Add the potatoes and little salt and then 2-3 tablespoons of water. Cover and leave to cook for around 5 minutes on a medium-low heat. Then add the aubergine, curry powder and check the seasoning. Cook until the aubergines are done.
