Five spice lamb cutlets


Ingredients. serves 4
  • 12 lamb cutlets
  • 2 tbsp extra virgin olive oil
  • 1 tbsp
  • 5 spice mix
  • 1 level tsp dried garlic powder
  • ½ tsp sugar
  • Salt
  • Pepper to taste

Brush the lamb cutlets with olive oil and lay them out in a large dish or tray.

In a bowl mix together all the dry ingredients: 5 spice mix, dried garlic powder, sugar, salt and a grind of pepper.

Season the meat using the dry mix, massaging well into both sides. Cover with clingfilm and leave to rest in the refrigerator for at least 1 hour (or overnight).

Heat a large frying pan and cook the cutlets for between 5-8 minutes, turning halfway.

Once cooked, arrange the cutlets on a chopping board or plate, cover with foil and leave to rest for at least 5 minutes before serving.
