Rolls of roast beef with goats cheese, saffron cream and truffle
Ingredients, serves 2
- 8 slices cold roast beef
- 100g fresh goats cheese
- 3 sprigs of thyme
- 80g low-fat plain yoghurt
- 1 sachet powdered saffron
- Shaved fresh truffle or in oil
- Extra virgin olive oil
- Salt
- Black pepper
Method
Strip thyme leaves from stalks and put aside.
Add thyme leaves to the goats cheese with a pinch of black pepper and mix well.
Season each slice of beef with a little salt and oil.
Place a spoonful of the goats cheese and thyme mix on top of each slice and roll into a cigar.
Dissolve the powdered saffron in a teaspoon of warm water, then add to the yoghurt along with a drizzle of oil, salt and pepper. Mix well.
To serve, put a little of the saffron cream on the plate and place the rolls on top. Shave the truffle over the top then add a few thyme leaves and a drizzle of olive oil.
